Matthew Foxon, Executive Chef of Saxon Hotel, Villas and Spa, is a celebrated culinary talent and visionary leader. In addition to overseeing the kitchens at The Saxon, he also oversees the culinary operations at Steyn City Hotel and the Steyn City Clubhouse, while working closely with the Head Chef at Louma Country Hotel to create exceptional dining experiences that delight guests across all properties.
Matthew’s expertise was showcased on the international stage when he led the bespoke catering for the LIV Golf 2026 event, delivering world-class cuisine and service for players and officials throughout the tournament. His ability to balance creativity, precision, and impeccable service has earned him a reputation as one of South Africa’s most knowledgeable and versatile chefs.
A second-generation chef, Matthew grew up immersed in the kitchen and formalized his training at the International Hotel School in Johannesburg. He earned early acclaim at luxury hotels such as the Michelangelo Hotel and Sheraton, winning ‘Young Chef of the Year’ in 2003 and 2004. He secured a runner-up position in the prestigious ‘Salon Culinaire South Africa’ competition in 2004.
Matthew further honed his skills internationally with a stint at Greyhound at Battersea in London, where he received a Restaurant Magazine Best Dish award in 2006. He then led The Rosendale, named Time Out’s Best Gastropub of 2007, before taking the helm as Executive Chef at the historic Criterion Restaurant in London.

When he is not in the kitchen, Matthew enjoys golf, exploring the bush, and spending quality time with his wife and their daughter, blending his love for adventure with his creative culinary vision.
