At the heart of Hanover stand the Leineschloss and Burg Königsworth. Both establishments have their own character and atmosphere, yet they are united by a shared philosophy: quality, warmth and genuine hospitality.

This philosophy is embodied by Johannes Lühmann. As a fourth-generation restaurateur, hospitality has been part of his life from an early age. Growing up in a family involved in gastronomy, he learned from an early age what it means to welcome guests and create places to which people are happy to return. Johannes Lühmann is a host by conviction.

Johannes joined the Chaîne in late 2022 as a Maître Restaurateur, becoming Vice-Chancelier of the Bailliage of Niedersachsen in March 2024.

The Leineschloss brings together three distinct gastronomic concepts under one roof, making it a particularly versatile destination in the heart of the city. Schorse im Leineschloss is characterised by its open, lively atmosphere and cuisine that combines high-quality products with relaxed hospitality.

Chef Maik Neumann is responsible for a modern brasserie-style cuisine with regional influences, seasonal ingredients and a clear focus on flavour. Classic dishes are given a contemporary interpretation - technically precise, rooted in tradition and at the same time elegant. Another defining feature is the English-style service, with many dishes being finished directly at the table.

Sommelier Luise Volkert completes the experience with extensive expertise, a keen understanding of wine and a warm, welcoming presence. Particularly noteworthy is the excellent selection of rosé wines on her list.

At VOTUM, Benjamin Gallein creates a deliberately different culinary experience. His Michelin 2-star cuisine stands for precision, clarity and creativity. The focus is on outstanding products, refined flavours and a modern style that combines regionality with international influences.

His menus are composed with meticulous attention to detail while retaining a remarkable sense of lightness. The experience is complemented by Jonas Gohlke, who as Sommelier creates both the wine pairings and the non-alcoholic accompaniment with great expertise and sensitivity. His selection establishes fascinating connections between the cuisine and the wines, adding a distinctive dimension to VOTUM’s culinary concept.

The Leineschloss is further complemented by another gastronomic offering that forms part of the daily life of the establishment: the Casino at the Lower Saxony State Parliament. From Monday to Friday, a changing selection of three daily dishes is served - uncomplicated, accessible and highly popular. In this way, the Leineschloss demonstrates how different gastronomic worlds can meet and complement one another: from sophisticated fine dining to traditional lunchtime cuisine in a political setting.

Burg Königsworth adds another venue with a history all its own. The building was formerly a brewery, and the original copper brewing kettles have been preserved, serving as a reminder of its past and contributing to the distinctive character of the property. Its historic ambience and vibrant modern use combine in a unique way.

Today, Burg Königsworth is a venue for special occasions: weddings, corporate celebrations, birthdays and numerous other events are given an exceptional setting here. At the same time, it is the centre of the company’s catering division. From here, culinary concepts for events of all kinds are developed and brought to life.

Together, the Leineschloss and Burg Königsworth form a cohesive yet multifaceted gastronomic ensemble. Led by Johannes Lühmann and his team, they combine tradition and modernity, culinary precision and genuine hospitality.
