Restaurant No. 61 recommended for Chaîne membership

Restaurant No. 61 is located at Kongensgade 61 in Odense - the hometown of famous fairy tale author, Hans Christian Andersen. The owner and Head Chef, Martin Meldgaard Pilsmark, was trained at Falsled Kro, Munkebo Kro and Under Lindetræet as Chef, Waiter and Sommelier.

He opened his own establishment in 2010. In 2014 he won the “Best Bistro of the Year” award. His cookbook “61. Licks” won the Gourmand Award 2015 in the Category “Best Chef Cookbook”. With this pedigree we were all looking forward to the “Admission Dinner” where he had promised to make a menu of his personal favourites.

Digestifs

After the dinner, the appreciation was delivered by our Échanson, Jens Steffen Hansen, and by Maître Rôtisseur Thorbjørn Scott Moy. Both commentators were full of praise and recommended that No. 61 should be admitted into the Chaîne. Accordingly, Jan Grevelund, Bailli Honoraire of Fioni, presented Martin Pilsmark with the official Chaîne Professionals Plaque.

Before heading home to turn back the clocks marking the end of summer, we enjoyed sampling Chef Martin’s mother’s homemade biscuits in great company as we sipped coffee and digestifs.
